Ingredients

Serves 4 persons

4 Pork chop

Salt & pepper to taste

2 Apples

2 cloves of garlic

1 sprig of thyme

1 glass of white wine

1 cup of gravy or sauce

Method

  1. Lay the pork chops on the board & season both sides with salt & pepper.
  2. Rub with the chopped garlic.
  3. Core the apples & cut in half, bake for 1 hour at a low temperature (140C) in an oven with a splash of white wine and the thyme.
  4. Pan fry the pork chops on both sides over a very high heat until well coloured and place in a baking tray that they fit side by side tightly.
  5. Add the apple, juice from the apple pan & the thyme.
  6. Pour in the wine and bake in the oven at 180C for 10 minutes, take one out & cut it open to see if it is cooked. Put it back in for a further 5 minutes if it is not cooked.
  7. Remove the cutlets & the apple from the tray & keep warm.
  8. Add the gravy and simmer until the sauce reaches the requied consistency.
  9. Arrange on plates (using the thyme to garnish), and drizzle with the sauce.

Note

This goes very well with mashed potatoes & braised red cabbage.
