Apricot marinated salmon, garlic & broccoli farfalle

Serves 4 persons

Ingredients

1/2 Onion

1 clove of Garlic

30ml Olive oil

150g Broccoli

250ml Great cream

100g Apricot matinated salmon (or gravlax or smoked salmon)

250g Farfalle (or other high quality pasta)


Method

  1. Pre-cook the farfalle pasta until al-dente (still with a bit of bite)
  2. Drain & leave to finish.
  3. Boil the broccoli florets in loads of salted water & then chill in loads of cold water.
  4. In a frying pan saute the chopped onion in the olive oil until golden.
  5. Very quickly add in the chopped cooked broccoli, sliced garlic and the cream, season & add the pasta.
  6. At the last minute add in the cubed marinated salmon (the salmon does not need to be cooked, just heated through).
  7. Check the seasoning again & serve in deep pasta boowls with a great garlic bread.
