Pan fried Salmon Niçoise
Serves 6 persons
Ingredients
6x120g Salmon fillet steaks
6 Eggs
350g Baby boiled potatoes
100g Black olives
1 small tin of anchovies
150g Green beans
150g Cherry tomatoes
150g Mixed leaves
As much of your favourite dressing as you would like
100ml vinegar
Method
1. Arrange a pot of water with vinegar in it to poach the eggs
2. Cut the potatoes in 4, toss with the cooked beans, tomatoes, olives and a little dressing
3. Arrange on the plate the salad leaves in the middle
4. Place the potato mix in the middle.
5. Pan fry the seasoned salmon on both sides in a little olive oil & finish in the oven at 180C until cooked through
6. When the salmon is cooked, start to poach the eggs.
7. Place the salmon on the potatoes, add the egg on top and drizzle with your dressing.
8. On the corner of each plate place an anchovy (so that those who like me love them can mix them in)
9. Serve piping hot & fresh.
