Serves 4 persons

Ingredients

800g Veal (loin or fillet, make sure it is white veal)

1 Lemon (juice & zest)

60ml Olive oil

4 slices Presunto

6 Sage leaves

1 cupWhite wine

80g Butter


Method

  1. Heat a large non stick pan until very hot.
  2. Season the thinly sliced veal with salt, pepper and lemon zest.
  3. Pan fry the slices in the olive oil on both sides until golden.
  4. remove the veal & keep warm.
  5. Pan fry the presunto slice with the sage until golden.
  6. Add the  white wine & stir well to collect all the caramel juices from the pan.
  7. Add the cold butter in cubes & swirl around until the butetr has melted.
  8. Add back in the meat slices and heat up.
  9. Arrange on the plates  & serve with great buttery mashed potatoes & your favourite veg.
