Makes enough for a large family

Ingredients

1Ltr milk

6 eggs

300g flour

50g sugar

A pinch of salt

40g butter

 

Method

  1. Mix all the ingredients well together with a whisk.
  2. Leave to sit for 30 minutes.
  3. Melt the butter in a non stick pan and then pour most of it into the batter & mix again.
  4. Wipe the rest of the pan with some kitchen paper.
  5. Add a ladle of the batter to the pan & swirl the pan to spread it over the base evenly. (if the batter is too thick or thin you can add a little milk or flour to compensate).
  6. When the pancake starts to colour around the edges slide a spatula in and turn it over.
  7. Cook for another minute and remove from pan.
  8. Wipe the pan with the same kitchen paper that has some of the butter on it & repeat the process.

 

Note

To cook pancakes for a large number of people you can boil a pot of water and place a plate on top.  When you cook a pancake lay it on the plate and cover with tin foil. Stack up the pancakes as you make them & the water bath will keep them warm so there is no long delays for you hungry herd.
