Chocolate & Orange Cake
Serves 12 persons
Ingredients
175g Good quality dark chocolate
450g Butter
225g Sugar
6 eggs, separated
Zest of 3 oranges
150g self raising flour
Topping
200ml good cream
225g Great quality chocolate
1 tablespoon of your favourite orange liquor
Method
- Heat the oven to 170C & line a 23cm buttered cake tin with greaseproof paper.
- For the topping, melt the chocolate with the cream & orange alcohol in the microwave, stirring occasionally & nor overheating. Leave to stand in a cool place still stirring occasionally as it thickens.
- Melt the other chocolate the same way in the microwave.
- Beat the sugar well with the softened butter until light & fluffy.
- Add the egg yolks one at a time.
- Add in the orange zest & stir in the melted chocolate.
- Stir in the flour gently.
- Beat the egg whites until stiff & forming peaks & fold gently into the mix.
- Bake at 170C for 35-40mins. Check if it is cooked by inserting a knife or skewer. If it comes out clean, then the cake is cooked through.
- Turn out the cake onto a wire rack & leave to cool.
- When cool pour over the chocolate topping.
Note
This cake is best enjoyed by yourself locked away with no distractions.
