Beef Stroganoff
Serves 4 persons
Ingredients
600g Beef fillet cut into strips ( you can try other meats, but the most tender will be beef fillet)
50ml Olive oil
100g Mushrooms
100g Onions
1 clove of garlic
20g chopped gherkin
1 spoon of Dijon mustard
60ml of good beef stock 8 or a little crumbled stock cube)
150ml great cream
Method
- Heat a non stick heavy, wide frying pan as hot as it will go.
- Add the beef & the olive oil in batches & fry off as hot as possible, so that the beef flash fries & does not stew.
- Remove the beef from the pan & add the chopped onions & sliced mushrooms.
- Sauté until soft & cooked through.
- Add a spoon of mustard, chopped gherkins, salt & pepper.
- Add the beef stock & the cream & reduce down until you have the consistency you are looking for.
- Add back in the beef, check the seasoning & simmer for 1 minute.
- Serve with great pilaf rice or sauté potatoes
