Wing of ray with a caper & lemon butter

Serves 6
Ingredients
6 skinless pieces of fresh ray wing (skate or raia)
Flour to dust
Salt & pepper
1 Lemon
50g capers
80ml olive oil
100g butter
20g chopped flat leaf parsley
Boiled baby new potatoes
French beans
1,5kg peeled potatoes
Method
- Dry off the ray wings with paper towel.
- Season on both sides with salt & pepper.
- Heat a large heavy bottomed non stick frying pan and add the olive oil.
- Pass the wings through the flour then into the pan.
- Turn when golden & add the squeezed lemon, capers and the butter.
- Put in the oven for approx. 5 minutes.
- Remove & serve with hot baby boiled potatoes & French beans.
- Drizzle the left over liquid over the fish mixed with the chopped parsley.
