Serves 6

Ingredients

6 skinless pieces of fresh ray wing (skate or raia)

Flour to dust

Salt & pepper

1 Lemon

50g capers

80ml olive oil

100g butter

20g chopped flat leaf parsley

Boiled baby new potatoes

French beans

1,5kg peeled potatoes

 

Method

  1. Dry off the ray wings with paper towel.
  2. Season on both sides with salt & pepper.
  3. Heat a large heavy bottomed non stick frying pan and add the olive oil.
  4. Pass the wings through the flour then into the pan.
  5. Turn when golden & add the squeezed lemon, capers and the butter.
  6. Put in the oven for approx. 5 minutes.
  7. Remove & serve with hot baby boiled potatoes & French beans.
  8. Drizzle the left over liquid over the fish mixed with the chopped parsley.
