Makes 12

Ingredients

1 dozen quails eggs

10 sausages

1 slice of black pudding or morcela

Breadcrumbs

3 eggs

1 tspn dried garlic

 

 

Method

  1. Lightly cook the quails eggs for 2 mins in boiling salted water.
  2. Cool down in iced water.
  3. Peel and put aside.
  4. Peel the sausages & mix really well with the chopped black pudding.
  5. Form the sausage around the quails egg until smooth & even.
  6. Pass through the beaten egg  & then the breadcrumb (mixed with the dried garlic).
  7. Repeat this & store in the fridge.
  8. When you need them place them a few at a time into hot oil & fry for 2 minutes.

Serve with great chutney
