Makes 12
Ingredients
1 dozen quails eggs
10 sausages
1 slice of black pudding or morcela
Breadcrumbs
3 eggs
1 tspn dried garlic
Method
- Lightly cook the quails eggs for 2 mins in boiling salted water.
- Cool down in iced water.
- Peel and put aside.
- Peel the sausages & mix really well with the chopped black pudding.
- Form the sausage around the quails egg until smooth & even.
- Pass through the beaten egg & then the breadcrumb (mixed with the dried garlic).
- Repeat this & store in the fridge.
- When you need them place them a few at a time into hot oil & fry for 2 minutes.
Serve with great chutney
