New York Baked Cheesecake
Serves 12 persons
Ingredients
350g requeijão
4 eggs
280g sugar
330g cream cheese
25g cornflour
1 lemon (zest & juice)
1 lime (zest & juice)
175g butter (melted)
100g oatmeal
50g rich tea biscuits (bolacha maria)
Method
- Melt the buter & mix 100g of it with the ground up biscuits & the oatmeal.
- Line the base of a 23cm spring lock tin with greaseproof & butter the rest.
- Pack in the oatmeal mix & put in the fridge to set.
- Beat the eggs & sugar together until pale & creamy (about 5 minutes).
- Whisk in the requeijão (cottage cheese) and cream cheeses.
- Add the cornflour, juice & zestr & the mutter & stir well.
- Pour into the mould and bake in the preheated oven at 150C for 2 hours.
- Turn off the oven and leave the cheesecake in until completely cold.
Note
This can be eaten immediately, but it is so much better the next day.
