Baked figs with blue cheese, presunto & honey
Serves 4 persons
Ingredients
4 figs
60g blue cheese
4 strips of finely sliced presunto
20ml honey
2 chopped tomatoes
10 torn leaves of basil
1 bag of washed rocket
30ml olive oil
15ml balsamic vinegar
Salt & freshly ground pepper to taste
Method

Cut a cross in the top of the figs & stuff with the blue cheese & wrap with the presunto.

Bake in the oven at 200C until crispy.

Toss the tomatoes, rocket & basil together, season & dress with the balsamic & olive oil.

Arrange the salad between 4 plates & top with a fig drizzled with honey.
