Serves 10 persons

Ingredients

400mlk sugar

400ml water

400ml tonic water

4 tbspn gin

Źest & juice of 1 lime

Zest of 1 lemon & juice of half a lemon

1 egg white

 

Method

  1. Bring the sugar & water to a boil until the sugar has disappeared.

  2. Add the tonic & leave to cool.

  3. Add the gin, juice & zests.

  4. Freeze until softly frozen (about 2 hours).

  5. Scrape the sorbet to loosen it up.

  6. Beat the egg white & beat into the frozen sorbet.

  7. Freeze again & serve in glasses.

Mmmmmmmmmmmmmmmmmmmmmmmmm.....
