Caramelized apple & black sausage salad with a honey mustard vinaigrette

Ingredients
1 morçela (black sausage)
4 red apples (preferably Starking variety)
1 bowl mixed salad leaves
1 pomegranate
50ml Olive oil
20g honey
25ml vinegar
20g mustard (you choose your favourite mustard, mine is a good wholegrain)
Salt & pepper to taste
Method
1. Cut the apple in quarters & remove the seeds.
2. Cut each wedge in half again.
3. Heat a non stick pan and place the apple wedges cut side down on the dry pan
4. After about 45 seconds turn one of the slices over onto the other cut side & check is the apple is caramelized. If so, turn the others.
5. Slice the morçela into rings and place on top of the apple, place in the oven for 3 minutes at 180C.
6. On a plate arrange the salad leaves.
7. Place on top the morçela, apple wedges, pomegranate seeds, salt & pepper
8. Blend with olive oil, honey, mustard & vinegar with a soup blender until smooth & creamy (if it is too thick, add a teaspoon of warm water)
9. Correct the seasoning of the sauce & drizzle over the salad.
10. Serve warm & enjoy
