Ingredients

200ml cream

200ml milk

6 eggs

30g honey

120g sugar

2 apples

Pinch of cinnamon powder

Method

1.       Bring the milk to the boil mixed with the cream, cinnamon & honey.

2.       Mix the eggs lightly with 50g of the sugar

3.       Slowly whish the milk mixture onto the egg, whisking all the time so as not to get scrambled eggs.

4.       Core, peel & cut the apple. Cook until soft covered in the microwave.

5.       Purée with a soup gun or liquidizer.

6.       Pass through a fine sieve into the cream mixture and mix well.

7.       Place in shallow dishes in a roasting tray. Add a little water in the bottom of the tray & bake at 160C until set (approx 20 mins depending on your oven)

8.       Remove from the water tray & leave to cool.

9.       Sprinkle the remaining sugar on top & caramelize under a hot grill or with a blow torch

10.   Serve immediately & enjoy

Note

This can be made up to 3 days in advance & kept in the fridge to be caramelized just before serving
