Ingredients
200g Puff Pastry
60g Parmesan cheese
200g Red onions
30ml Olive oil
60g Sugar
150ml Red wine
60g Olives
60g Anchovies (or marinated sardines)
Mixed salad leaves (enough for 6 people)
Method
1. Slice the red onions & put in a pot with the olive oil, sugar & red wine.
2. Season (not too much as the anchovies will have salt)
3. Cook really well until all the liquid has boiled off.
4. Roll out the puff pastry to 2mm thick.
5. On half the pastry cover with freshly grated parmesan.
6. Fold over the pastry to close in the parmesan & roll out again to 2mm thick.
7. Place on a baking tray & spread the onion evenly on top.
8. Decorate with the olives & anchovies.
9. Bake in a hot oven at 200C for 15-17 minutes until golden and cooked through.
10. Remove from tray & place on a wire rack to cool a little.
11. Slice & serve with dressed salad leaves.
Note
This is a form of pizza from the South of France & any flavour combinations can be placed on top.
