Cappuccino of spinach
Serves 4
Ingredients
30ml Olive oil
150g Spinach
50g Onion
1 clove Garlic
800ml Milk
A pinch of Nutmeg
30g Flour
Salt & Pepper to taste
Method
- Sweat the garlic & chopped onion in the olive oil until soft without colouring.
- Add the flour and cook for 2 minutes on a low heat.
- Add 700ml of the milk a bit at atime always stirring on the heat so that lumps do not form.
- Season with salt, pepper & nutmeg.
- Cook for 10 minutes, simmering gently so there is no flavour of raw flour.
- Just before serving add the spinach and bring back to the boil, blend with a stick blender and serve in glass coffee cups.
Notes
For the cappuccino topping you can either use the adapter on some coffee machines if you have one at home or you can buy some soya lecithin in the health food section of you supermarket & heat it to about 60C with 100ml of the milk & froth it up with a stick blender. Spoon a liittle onto each soup just before serving.
