Honey glazed chicken stuffed with gorgonzola

Serves 4

Ingredients

4 Chicken breasts (skin on)

60g Gorgonzola

100ml White wine

60g Honey

100ml Cream

 

Method

  1. Lay the chicken breast on chopping board, skin side down.
  2. Peel back the fillet (the thin strip of meat) & cut diagonally into the breast to create a pocket.
  3. Fill with the gorgonzola & sprinkle black pepper.
  4. Fold the cut over & close with the fillet.
  5. Heat up a heavy bottomed non stick pan.
  6. Place the breasts in the dry pan skin side down.
  7. Fry at a high temperature until they are golden.
  8. Turn them over & season with salt.
  9. Pour the honey over the breasts & then the wine into the space between the breasts.
  10. Bake in the oven for 12 minutes at 180C.
  11. Remove & take out the breasts (leave them in a warm place to rest).
  12. Add the cream to the juices in the pan & bring to a boil.
  13. Blend the sauce with a soup jizzer & serve with the breasts.
