Honey glazed chicken stuffed with gorgonzola

Serves 4
Ingredients
4 Chicken breasts (skin on)
60g Gorgonzola
100ml White wine
60g Honey
100ml Cream
Method
- Lay the chicken breast on chopping board, skin side down.
- Peel back the fillet (the thin strip of meat) & cut diagonally into the breast to create a pocket.
- Fill with the gorgonzola & sprinkle black pepper.
- Fold the cut over & close with the fillet.
- Heat up a heavy bottomed non stick pan.
- Place the breasts in the dry pan skin side down.
- Fry at a high temperature until they are golden.
- Turn them over & season with salt.
- Pour the honey over the breasts & then the wine into the space between the breasts.
- Bake in the oven for 12 minutes at 180C.
- Remove & take out the breasts (leave them in a warm place to rest).
- Add the cream to the juices in the pan & bring to a boil.
- Blend the sauce with a soup jizzer & serve with the breasts.
