Roast figs flambeed with Irish whiskey

Serves 4 persons
Ingredients
8 figs
60g butter
30g Sugar
30ml Irish whiskey
2 lemons
Method
- Melt the butter in a non stick pan over a low heat.
- Add in the sugar.
- Cut a cross in the top of each fig (so that it will open out as it cooks)
- Place the figs onto the sugar.
- Place the pan in a hot oven 220C for 7minutes until the figs have opened.
- Remove and carefully divide the figs between 4 plates.
- Put the pan back on the heat and add the whiskey, light with a match (being very careful) and Cook until all the alcohol has burned off.
- Add the lemon juice & mix around until all the juices have dissolved together.
- Pour over the figs & serve with your favourite ice cream or sorbet.
