Roast figs flambeed with Irish whiskey

Serves 4 persons

Ingredients

8 figs

60g butter

30g Sugar

30ml Irish whiskey

2 lemons

 

Method

  1. Melt the butter in a non stick pan over a low heat.
  2. Add in the sugar.
  3. Cut a cross in the top of each fig (so that it will open out as it cooks)
  4. Place the figs onto the sugar.
  5. Place the pan in a hot oven 220C for 7minutes until the figs have opened.
  6. Remove and carefully divide the figs between 4 plates.
  7. Put the pan back on the heat and add the whiskey, light with a match (being very careful) and Cook until all the alcohol has burned off.
  8. Add the lemon juice & mix around until all the juices have dissolved together.
  9. Pour over the figs & serve with your favourite ice cream or sorbet.
