Serves 4 persons

Ingredients

80ml Olive oil

60g Onion

4 cloves Garlic

1kg Clams

small bunch of Coriander

1 Tomato

Salt & pepper to taste

Glass of white wine

300g Tagliatelle

 

Method

  1. Soak the clams in cold water, changing it regularly.
  2. Heat up a large sauce pan that has a tight fitting lid.
  3. Add in the clams, garlic,chopped onion, half the olive oil, coriander & wine.
  4. Cover & cook until all the clams are open, shaking occasionally.
  5. Strain off the clams & keep them covered so that they do not shrivel up.
  6. Cut the tomato in half & add to the juice, boil it down to half the quantity.
  7. Add the cooked tagliatelle & toss well, then ADD the clams & mix again.
  8. Check the seasoning and serve immediately.
