Serves 4 persons

Ingredients

1/2 Onion

1 clove Garlic

30ml Olive oil

60ml White wine

250ml Cream

40ml Vodka

280g Pasta bows

Salt & pepper to taste

320g John Kettleys smoked salmon (unsliced)

 

Method

  1. Fry off the chopped onion & garlic in the olive oil.
  2. Add the white wine & reduce until nearly all has evaporated.
  3. Add the cream & season as required.
  4. Reduce the cream by half.
  5. Add the cooked hot pasta bows & mix well.
  6. Add the vodka & toss. Serve immediately.
  7. Arrange the smoked salmon in thick slices on top.
  8. Sit back & enjoy.
